Omelets are my favorite breakfast food or even lunch when mornings are crazy. They are super easy to make and you can stuff it with lots of vegetables! š I use my Portion Fix containers to keep me on track with my nutrition and to balance out all my food groups.
- First, pick out the veggies you want to use in your omelet.Ā Diced onions, spinach and diced tomatoes are my favorite.
- Ā Next, I plop my pre measured veggies into the hot skillet to heat up and soften.
- While the veggies are cooking, I crack the two eggs into a bowl and sprinkle some salt and pepper to give it some flavor. Then mix it up with a fork to break the yolks.Ā
- Once theĀ onions are soft, it is time to pour the egg mixture over the veggies. I move the pan back and forth to make sure it covers all of the veggies evenly. Allow to cook until it isn’t as runny.
- Are you ready toĀ use those spatula skills? Gently fold the omelet in half and allow just a few minutes for it to cook before sliding itĀ onto yourĀ plate.
- To complete this breakfast, you could add a seasonal fruit and a slice of toast on the side. Make sure to sit down and enjoy your food. No rushed eating you hear! š
