Here is a family favorite! Hubby approves and kids approve! There are no leftovers in this house after this meal! I got this recipe from the book Eating Your Way to Good Health by Doug Kaufmann. I have changed it around from the original just a bit with how I cook it.
Ingredients
3 chicken breasts cooked and cut up into cubes
1 tablespoon olive oil or butter
½ cup celery, chopped (I use an extra zucchini in place of the celery)
½ cup bell pepper, chopped
1 zucchini or squash, chopped (I add an extra one, I love veggies!)
½ cup onion, chopped
1 cup sour cream
1 teaspoon salt
¼ teaspoon pepper
Instructions
Heat the oven to 350 degrees and bake the chicken breasts for 30 minutes or until done.
While the chicken is cooking I am chopping up veggies.
Once the chicken is done, let it cool. Then cut into cubes using kitchen scissors. Put aside.
