Honey Salmon In Foil

This is a super quick meal to make and so delicious with no mess! It creates a nice sweetness to the salmon that a non fish eating husband enjoyed. I got this recipe from: Damn Delicious.net
Ingredients
  • ¼ cup honey
  • 3 cloves minced garlic
  • 1 TBS olive oil
  • 1 TBS white wine vinegar
  • 1 TBS fresh thyme leaves (I used 1 tsp dried thyme)
  • Salt and pepper to taste
  • 2 pounds salmon
Instructions
  1. Preheat oven to 375 degrees Fahrenheit. Line a baking sheet with foil.
  2. In a small bowl, whisk together all the ingredients except the salmon of course.
  3. Place the salmon on the prepared baking sheet and fold up all 4 sides of the foil. This prevents the honey mixture from spilling. Spoon the honey mixture over the salmon. Fold the sides of the foil over the salmon to cover it completely and seal it closed. I had to add extra foil over the top of the thick part of my salmon.
  4. Place into oven and bake until cooked through, about 15 -20 minutes. Mine took an extra 5 - 10 minutes longer since my salmon was thicker.
  5. Serve immediately. Delicious!!!
