I now have two children in elementary school and I want to make a healthy lunch for them each day but also don’t want to stress so much over it! I love my Planet Box lunch boxes. They have little sections that I have assigned to different food groups. Helps keep it simple! We have a fruit, veggie, carb/protein, a dairy on occasion and something crunchy. On Tuesdays and Thursdays they get a sweet treat. I like to teach them now that sweets are to be had in moderation not every day. I let the kids be as involved in picking what they want in each category so they actually eat it! They love helping make it as well.
The big change is our protein. Below are examples of ways to change up lunch, so we aren’t having the same peanut butter and jelly sandwich every day. The fruits and veggies change with the seasons also to keep the cost down for my grocery bill.
Almond Butter and Jelly
We have moved past the peanut butter and now enjoy almond butter. If you want to switch up the jelly and avoid the extra sugar you can slice up a banana. My kids love the switch every so often. The reason I have the cucumber slices in a bag is because the kids say the water in them leaks out of their lunch box. This was our way of stopping that.
Chicken Nuggets!
We get the Applegate Gluten-Free Chicken Nuggets. One day I might have time to make my own. Organic ketchup because there is no high fructose corn syrup in it. Please read ingredients. Apples, carrots and some veggie chips from Trader Joe’s for sides. 🙂 Took me 12 minutes to put the girls two lunches together. Most of that was cooking time for the nuggets.
Turkey Wrap
Today we made a whole wheat tortilla shell into a roll up with some vegenaise (egg allergy in the family so we use this instead of mayo) and turkey slices. She didn’t want tomato or spinach in it but you can totally add other things to your wraps! I cut it in half and then use these fun little tooth pick pandas to keep them from flapping open! We had plain yogurt with frozen blueberries underneath and cinnamon on top, along with pretzel bites, oranges, and cucumber sliced.
Salad
My oldest two kids are girls and they are complete opposites!!! This lunch is for my soup and salad loving kid. She is not a fan of sandwiches. She can handle them twice a week but needs variety or she won’t eat it. This salad is easy to make! Spinach and chickpeas. The dressing is in the round container to add at school. We also have sliced yellow bell peppers, green apples, pretzel bites and a string cheese in this lunch!
Homemade Lunch-able
We love making our own lunchables!! I use the round container holding the yogurt to cut out the bread, meat and tomatoes to be circles. Under the yogurt is frozen blueberries. I add cinnamon on top if my child wants it. This lunch has apples and chips for the other side items.
Homemade Mini Pizzas
I used leftover pizza dough from our family pizza night. Recipe HERE! The kids had a blast making these the morning before school. Super simple and fun! You will get the AWESOME mommy award that day for sure! The rest of the lunch was very yellow since I was using what I had on hand. Bell peppers, pears and potato chips. Still well rounded but not as colorful as I would like.
Air Popped Popcorn
I have moved away from the bagged popcorn. Air popped popcorn is where it is at!! I pop a big batch on Monday morning and keep it in a sealed container. I then add it to my kids lunches for something crunchy each day that week. I drizzle some butter if they like that and salt. Wala! It stays fresh until Friday for sure. I don’t know about longer because we end up finishing it.
