Lemon Juice Ice Cubes

Lemons are in season!!! This is something I started to do in 2016 and it works out wonderfully!! Next time you are at the store pick up an extra bag or two of lemons. They are cheaper when is season, so this is the time to do this! I got this silicone mini muffin tray to help freeze my lemon juice for future use.  Then the only other thing you need is a way to squeeze the juice out and some arm strength to do it! *The link above is an Amazon Affiliate link. First, I heard rolling the lemons before squeezing helps you get more juice out. I cannot say for sure if it helps or not but the kids love helping on this step!

Second, you cut the lemons and squeeze the juice out. The kids helped for a few and then got tired of squeezing. Keep squeezing until you go through all your lemons. From my one bag I got almost a cup and a half of juice!

 

BEFORE you do this third step make sure you have a small cookie tray under your silicone muffin tray. It will be very hard picking up the silicone tray if you skip this step and all your hard work will spill out! It has happened to me so I am warning you.  Now, I use my tablespoon and measure out the lemon juice into each of my mini muffin spots on my silicone tray. Pop it into the freezer in a flat area and wait. I left mine in there for the morning while I did other house chores and checked at lunchtime and they were frozen.

 

Lastly, you will really love that you used a silicone tray because it is so easy to just pop each frozen tablespoon of lemon juice out. Then plop them into a bag and put back into the freezer for future use.

I like to have one lemon ice cube in my water each morning. Lemon juice is high in vitamin c, so great during the winter months. I warm up my water some days and add some local honey to it. When I have a busy morning, I just plop one into my water glass and start my day out with an immune boost. Great for your digestive system to to wake up and get going with this amazing juice as well! So many benefits to fresh lemon juice! Drink up!
