Raw Ranch Dip

I found this dip recipe when visiting a Whole Foods cooking class for raw foods. It was so delicious and blew my mind how much it tasted like the real ranch dips but had no dairy in it!
Ingredients
  • 2 cups soaked cashews (I got the plain no salt cashews)
  • ¼ cup lemon juice
  • 1 cup water
  • ⅛ cup apple cider vinegar
  • 1½ tsp salt (I use Himalayan pink salt)
  • 1 tsp garlic clove or ⅛ tsp garlic powder
  • 1 tsp black pepper
  • 3 Tablespoons FRESH dill weed chopped OR 2 Tablespoons dry dill weed (I used dry)
Instructions
  1. In a high speed blender blend the soaked cashews drained, lemon juice, water, apple cider vinegar, salt and garlic until dressing is smooth.
  2. Pulse in the dill weed and black pepper.
  3. Let the dressing set in the fridge for an hour for best taste.
  4. Enjoy with your favorite vegetables for a dip or possibly on a salad as a dressing.
