This is a great healthy version of Sloppy Joe's. When the whole family approves it goes on our staples list!!
Ingredients
  • 2 tsp olive oil, divided use
  • 1 lb. ground lean turkey
  • ¾ cup chopped onion
  • ¾ cup chopped red bell pepper
  • 2 cloves garlic, chopped or pressed
  • 2 cups all natural tomato sauce, no salt or sugar added
  • 1 Tbsp. Worcestershire sauce
  • 1½ tsp hot pepper sauce (optional, I didn't use with the kids)
  • 1 Tbsp. pure maple syrup
  • ½ tsp Himalayan salt
  • ¼ tsp ground black pepper
  • 4 slices of whole grain sprouted bread (Ezekiel is a great choice)
  • Chopped fresh parsley for an optional topping
Instructions
  1. Heat 1 tsp of oil in a large sauce pan
  2. Add your ground turkey and cook until no longer pink. It took mine 8 minutes.
  3. Remove cooked turkey to a bowl.
  4. Eat remaining 1 tsp of oil and add in your onion and bell pepper. Sauté until onion is translucent. About 4 minutes.
  5. Then add in your pressed garlic and stir for a minute.
  6. Add in your tomato sauce, Worcestershire sauce, hot pepper sauce, maple syrup, salt and pepper, and cooked turkey and mix well.
  7. Reduce the heat to a simmer and stir occasionally for 15-20 minutes or until it has thickened.
  8. One slice of bread with 1 cup sloppy joes will give you a serving size of 1 Green, 1 Red, 1 Yellow and 1 tsp for your Portion Fix nutrition plan.
  9. Sprinkle with your fresh chopped parsley if you desire. Enjoy!
