Banana Breakfast Muffins

Simple and quick for a busy morning. Can be refrigerated 2-3 days or frozen 2-3 months.
Ingredients
  • 2 bananas, ripe
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1½ cups oatmeal
  • ½ cup water
  • 1 cup fruit chopped medium (optional)
Instructions
  1. Preheat oven to 400 degrees.
  2. Mash bananas in a medium bowl until smooth.
  3. Add vanilla and cinnamon.
  4. Add oatmeal and water, and mix gently.
  5. Add chopped fruit if using and mix gently.
  6. Texture should be loose but not liquid, holding together but not stiff. Add a little more oatmeal if too liquid or a little more water if too stiff.
  7. Spray muffin tin or use paper liners.
  8. Spoon muffin mixture into the tin and bake for 15 minutes or until browned on top.
  9. Turn off heat and let sit in oven for 10 minutes.
