- 2 bananas, ripe
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1½ cups oatmeal
- ½ cup water
- 1 cup fruit chopped medium (optional)
- Preheat oven to 400 degrees.
- Mash bananas in a medium bowl until smooth.
- Add vanilla and cinnamon.
- Add oatmeal and water, and mix gently.
- Add chopped fruit if using and mix gently.
- Texture should be loose but not liquid, holding together but not stiff. Add a little more oatmeal if too liquid or a little more water if too stiff.
- Spray muffin tin or use paper liners.
- Spoon muffin mixture into the tin and bake for 15 minutes or until browned on top.
- Turn off heat and let sit in oven for 10 minutes.
