Sunday Homemade Pancakes

I make a big batch of these on Sunday to use as leftovers for a quick Monday morning breakfast to start the week. The kids help mix the ingredients and it is homemade from scratch! That gives it extra points!
Ingredients
  • 3 cups all purpose flour
  • 7 teaspoons baking powder
  • 2 teaspoons salt ( I use himalayan pink salt)
  • 2 Tablespoons maple syrup
  • 2½ cups milk (I use coconut or unsweetened almond milk)
  • 2 eggs
  • 6 Tablespoons melted butter ( I use KerryGold)
  • 1 ripe banana mashed ( Optional but SO good if you have it on hand.)
Instructions
  1. All you need is a large bowl to sift together the flour, baking powder, and salt. Then, make a well in the center and pour in the milk, egg, maple syrup and melted butter. Mix it all until smooth with a whisk.
  2. Heat a large griddle or frying pan over medium high heat. I set mine to 350 degrees.
  3. Fold in the frozen blueberries first or I like to sprinkle them on top after pouring the batter on the griddle. Up to you. Pour the batter using about ¼ cup per pancake. I use the scoop it batter spoon you see in the picture above. It works great! Link on bottom of page.
  4. Heat on each side until golden brown. I watch for the bubbles on top to know when to flip. Serve hot. Depending on what we have on hand, we will use butter, maple syrup or heated up blueberries to make a blueberry sauce to serve on top. The kids love all the options. They are great plain too!!
