Ghosts in the Graveyard

Ghosts in the Graveyard has been a tradition since I was a kid. My mom and I used to make this recipe together every Halloween. Now I get to pass on that same tradition with my kids. I have changed up the ingredients to match my passion for better ingredients, avoiding the hydrogenated oils, high fructose corn syrup and any food colorings. The kids ask for this every year! We have made a few different versions for toppings that I will share at the end, but the guts of the dish are the same. You will need…

2 pkg. (3.9 oz. each) Chocolate Flavor Instant Pudding
3 cups cold milk (I use coconut milk to minimize the dairy)
1 tub (12 oz.)  Whipped Topping, thawed, divided (I use coconut whipped cream)
15 OREO Cookies, crushed (about 1-1/2 cups) (I use the Whole Foods 365 brand of sandwich cookies)
Mix your pudding and milk together for 2 minutes and let sit for 5 minutes to get thicker. While it is sitting, you can dump the sandwich cookies into a large gallon ziplock bag. Make sure it is sealed tight and let one of your kids release some anger by hitting the bag with a roller pin or spoon.
Next, mix in 3 cups of the whipped topping (I get my coconut whipped topping at Whole Foods) and half of the cookie mixture from the bag.
Now transfer the mixture to a 13 x 8 baking dish and then cover it with the remaining of the cookie mixture from the bag. It is best to refrigerate it for 1 hour to set and get super thick. Do not skip this step. 🙂
After it has refrigerated for at least an hour, it is time to add something extra to make it look like a graveyard! You can look for different cookies that look like RIP stones or go with worms and skeleton hands coming out of the ground. Add in some leftover whipped topping to create ghosts floating around. Now it is time to dig in!!
Don’t stress over the graveyard toppings, the kids will see it for a second but be eating it before you even finish putting the last ghost on! Relax! It is Halloween, it can be messy!
