I was trying to come up with a meal that was quick and used my head of green cabbage and some of my big carrots I had in my fridge. I searched the web and found this delicious and simple recipe that I had all the ingredients for!! Yay! Thank you I Food Real!! Go to their sight to get the full recipe!
I only changed one item and that was I used my coconut aminos in place of the brags soy sauce. 🙂 It also had me choose between maple syrup or honey so I used my local honey for the sauce.
It took me 20 minutes to have it on the table before my son’s Tae Kwon Do practice. The kids ate it up and asked for seconds. All of them! This will be a go to dinner for sure and it made a lot for cheep!
I sautéd the garlic and ginger in sesame oil then added the shredded carrots and cabbage. While that steamed for about 6 minutes I cooked the rice noodles in my already boiling pot of water (get that going first) and put the ingredients for the sauce together.
Once the rice noodles were cooked and drained, I added them along with the sauce to the veggies. Gave it a good mix and DONE!!
There are so many veggies hidden in this dish and they ate it all with out picking any out. We made it to his Tae Kwon Do practice with time to spare and everyone was full and happy.
