It all started when I ran out of jelly one day. I started making the kids sandwiches for school that morning, when I noticed I was out of jelly. There was no time to run to the store, so I got creative. I decided to slice up some banana to go along with my daughters almond butter sandwich. When she got home she said she LOVED it and wanted it again the next day!
Since it was such a big hit, we decided to try out sliced strawberries too. This one went over even better than the bananas. I love using real fruit instead of the jelly because there is so much added sugar, even in the healthier versions. I challenge you to try one of these options out the next time you are making your kids simple PB&J sandwich. See what they think!
I also will make these as an open faced sandwich for a healthy snack. I enjoy using Ezekiel bread. It is most often found in the frozen bread section of the grocery store. I just pop a frozen slice off, toast it in my toaster to thaw it out and then spread my almond butter and sliced fruit on top. Delicious!
