This is a family favorite and can help change up Taco Tuesday once a month! The kids love it! 🙂 You can eat it plain with a salad if you want to avoid grains and dairy. Still delicious! Also, for leftovers you can eat it over some white or brown rice or a baked potato to make them extend another day. This is one of my weekend prep meals since I can freeze it all in a bag and use it when I want to later in the week by throwing it into the crockpot. - 1 lb. cooked ground turkey
- 1 medium onion chopped
- 1 can corn drained
- 1 can black beans drained
- 1 can navy beans drained
- 1 8 oz can tomato sauce
- 2 14 oz. cans diced tomatoes
- 1 small can diced green chiles
- 1 tablespoon homemade taco seasoning
- *If meal prepping on Sunday:
- Place all ingredients in freezer bag and freeze until ready.
- Thaw slightly, place in crock pot and cook on low for 4-6 hours.
- *If making morning of:
- Cook the turkey, then place all the ingredients into the crock pot and cook on low for 4-6 hours,
- *If making at dinner time:
- Cook the turkey and onion, then place all ingredients into large sauce pan. Let simmer for 30 minutes.
- ONCE COOKED:
- Serve with shredded cheese, sour cream and scoop corn chips. My kids like to spoon the chili into their scoop chips as shown in the picture. 🙂
