Throw Together Chicken Filling

I have started cooking a whole chicken in my Instapot every Sunday. I then use the cooked chicken in various dishes during the week. Saves on time and makes dinner get on the table quicker.

Tonight I made this chicken filling for our lettuce boats. I used what I had on hand and it came out quite delicious! All three kids approved! That made one happy mama!!

First, I diced up the cooked chicken I had leftover in the fridge. It made about 3-4 cups worth. I put it in a pot and turned the burner on low to give it some warmth. I then squeezed 1 large lemon into the pot, diced up 3 medium tomatoes and added them in. I gave it a quick stir. I finely chopped up some parsley, about 1/4 cup and added that in along with 1 tsp Himalayan Salt. Now just stir it and get the mixture to the temperature you want for your meal.

I used this filling to put in some butter lettuce leaves. The kids enjoyed filling them up. We did not have extra toppings but you could add cheese or sliced avocado to it as well. We roasted some asparagus to have as a side dish with it. Lots of yummy veggies to fill you up and make you satisfied.

This is a great dinner for my 2B Mindset peeps!!! These lettuce boats could also be a great lunch too because the chicken filling is great cold as well.
