If you have started to follow my 131 Method Journey posts then you know how amazing all the recipes are in the “lifestyle”program. This has been a recipe I make once a week when avocados are in season. The seasons vary but they are typically in season from spring to fall. This recipe is simple to make which is a big win in my book! My oldest daughter who is 11 years old loves it too. I now have the recipe memorized, so I can whip it up quickly and spread it on some toasted Ezekiel bread and there is lunch in my tummy!
A tip I learned on picking the best ripe avocado is to always look for one that has the stem still attached. It should be a darker shade skin and give a little when gently squeezing the avocado. If it is hard and a lighter green then it is not ready yet, if it is super squishy then you will find all those brown spots inside. Right in the middle is perfection!
You will need just seven ingredients! 1 can albacore tuna drained, 2 medium ripe avocados mashed, salt and pepper to taste, 1 teaspoon MCT oil (I have used my avocado oil), juice from one lemon (about 2 teaspoons), and one dill pickle (I like the Bubbies Brand) diced up. Mix it all together and you can eat it plain, put it on Ezekiel bread alone or with lettuce and tomatoes. Make it your own! You could even add chopped onion if you want! 🙂
