I made this for a quick inexpensive dinner at the end of the month when my grocery budget was almost gone. It was a big hit with the kids and it has stayed as a monthly staple. Sometimes the kids help assemble the sushi rolls and other times I make them ahead and it is a dinner on the go in the car.
The ingredients are super simple. Nori Seaweed Sheets, sushi rice (I have used regular white rice and basmati rice also and both worked fine.), shredded carrots (by hand or store bought), shredded cucumber, and diced avocado. Himalayan pink salt and sesame seeds are good to add as well along with the soy sauce (I get the Bragg’s Amino brand.) Have a small glass of water near by too.
Once you have all your ingredients laid out. I let the rice cool just a bit, but not all the way. You want it a little warm when rolling the nori sheets. I have no idea where I got this bamboo sushi roller, but I put an Amazon link to one similar here if you are interested. I am just a beginner at this and have no skill for it. They taste good and that is what counts.
I lay it all out like this and just roll it up. There might be a more precise way but this has been working for our family.
After you take away the bamboo board and finish rolling the sushi roll you add some water along the open edge to help it stick and seal the roll. I then place the rolled up ones on a cutting board to get ready to be cut up. On some days I am so busy I do this in steps.
#1 cook rice, dice and shreds veggies.
#2 put together sushi rolls
#3 cut the rolls and divide into storage containers for easy dinner on the go!
#4 eat!
It doesn’t cost much, it is simple to make and can bring the family together making it. Yummy and delicious even on the go!
