Baked Macaroni and Cheese

I got this simple delicious homemade macaroni and cheese recipe from my mom many years ago. A great dish to bring to a BBQ or have as a side to some Teriyaki Chicken. This is a family favorite that has been with me since I was a kid and now my kids love it!
You will need just 7 ingredients and a little bit of time. Corn Starch, Salt and Pepper. Milk, I have used coconut milk and I did not notice a big change in taste. Kerry gold Butter and Cheddar Cheese. It must be a bar of cheese. Do not buy pre shredded cheese. It will not taste the same. Kerry gold has their own line of cheeses now that are great!! The last thing is 8 oz of pasta! We like mixing it up with different shapes. The kids like the shells and my husband prefers the spirals.
First, cook your pasta following the directions on the box. While that is happening I shred my cheese.
Next, after draining the pasta, I use that same warm empty pot to combine the corn starch, salt, and pepper; Stir in the milk until smooth. Then, add in the butter stirring constantly, bring to boil over medium-high heat and boil 1 minute. Make sure to keep stirring because it will cook and stick to the bottom of the pot quickly!!
Remove the pot from the heat. Reserve ¼ – ½ cup cheese for topping. Stir in remaining cheese until melted.
 Add the melted cheese mixture to your pasta that is in the dish you plan to be cooking it in.
Sprinkle on the top with reserved cheese. Bake uncovered in 375 degree oven 25 minutes, or until hot and bubbly.
Now enjoy!! For best taste let it sit out for 5 minutes so it sets and cools off a little.

Serves: 6 servings
Ingredients
  • 2 Tbsp Corn Starch
  • 1 tsp Salt
  • ¼ tsp Pepper
  • 2 ½ cups Milk
  • 2 Tbsp Butter
  • 8 ounces Cheddar Cheese, shredded (about 2 cups) I use the whole 12 oz bar of cheese and shred it myself. It tastes better this way. 🙂
  • 8 ounces Macaroni, cooked as on box (ex: elbow, shell, penni.) A 10 or 12 oz box works too.
Instructions
  1. In medium saucepan combine corn starch, salt, and pepper; Stir in milk until smooth.
  2. Add butter stirring constantly, bring to boil over medium-high heat and boil 1 minute.
  3. Remove from heat. Reserve ¼ (I do ½ cup cheese for topping.) Stir in remaining cheese until melted. Add cooked macaroni.
  4. Turn into greased 2-quart casserole. Sprinkle with reserved cheese. Bake uncovered in 375 degree oven 25 minutes, or until hot and bubbly.
