Banana Oat Muffins

These are DELICIOUS and kid approved! They take maybe 5-10 minutes tops to put together then in the oven they go and 15 minutes later you have these warm banana oat muffins to serve for a quick breakfast during a busy morning before school.

All you need are some ripe bananas, I make a double batch because I have 3 kids and a husband that loves these! Makes enough for two mornings at our house. After you mash the banana add in the cinnamon and vanilla extract. I have a pick kid that doesn’t like cinnamon in other dishes but she doesn’t even notice it in these muffins! WIN!

Once those are mixed in dump in the oats and water and mix! I don’t normally add the fruit because it is extra work to chop or to remember to have dried cranberries on hand but they are a great addition! I bet chopped apples would be delicious! I will try that out next time.

Okay, so now everything is mixed and ready to go into the muffin tin. I spray it with my coconut oil spray and use these awesome scoop it batter spoons I found on Amazon to get the exact same size muffins for all! That is a big thing for kids so not arguing over who got the bigger one anymore. 😉 I have the link to these below if you are interested. I use them for all sorts of recipes including measuring out my blueberry pancakes and waffles!!

With using these batter spoons I get 15 muffins from my double batch! Now put them in the oven at 400 degrees F for 15 minutes. It says to let them stand for 10 minutes longer in the oven with the temperature off but I cannot wait! I grab them out and use a rubber spatula to pop them out of the muffin tin. The kids are grabbing them as I take them out! Enjoy them alone or with some seasonal fruit on the side.

Simple and quick for a busy morning. Can be refrigerated 2-3 days or frozen 2-3 months.

Ingredients
  • 2 bananas, ripe
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1½ cups oatmeal
  • ½ cup water
  • 1 cup fruit chopped medium (optional)
Instructions
  1. Preheat oven to 400 degrees.
  2. Mash bananas in a medium bowl until smooth.
  3. Add vanilla and cinnamon.
  4. Add oatmeal and water, and mix gently.
  5. Add chopped fruit if using and mix gently.
  6. Texture should be loose but not liquid, holding together but not stiff. Add a little more oatmeal if too liquid or a little more water if too stiff.
  7. Spray muffin tin or use paper liners.
  8. Spoon muffin mixture into the tin and bake for 15 minutes or until browned on top.
  9. Turn off heat and let sit in oven for 10 minutes.
