Cucumber Salad

With cucumbers in season, this is a wonderful dish to make for a light lunch or for a side for dinner. I am sure your friends would love it for a side dish at a gathering as well! Super simple to throw together, the longer it sits to marinate in the refrigerator the better the flavor! Kid approved also, so have it on hand for a snack when they arrive home from school. I had this all three days for my 3 Day Refresh Cleanse I do every so many months. One of my favorite recipes from it! You will need the following ingredients to put together this simple yet flavorful dish. Full recipe below to print out.

First, chop up all the ingredients and measure them out. Then combine the apple cider vinegar, balsamic vinegar, lemon juice and olive oil together. In a separate bowl combine your cucumbers, cherry tomatoes, red onion, parsley and salt.

Now you just need to drizzle the dressing over the veggies and it is ready to eat, but I suggest letting it marinate with all the flavors in the refrigerator for at least an hour for the best flavors!! Enjoy!

A simple yet flavorful dish that is easy to throw together for a lunch, snack, or side vegetable for dinner. You can even bring this to your summer gatherings as a healthy side dish. I got this from my 3 Day Refresh recipe book and kept it as a favorite.

Serves: 3 adult meals
Ingredients
  • 3 Tbsp. apple cider vinegar
  • 3 tsp. balsamic vinegar
  • 2 Tbsp. fresh lemon juice
  • 3 tsp. olive oil
  • 1½ medium cucumber, halved lengthwise, sliced
  • 1½ cup cherry tomatoes, halved or quartered
  • 3 Tbsp. chopped red onion
  • 6 Tbsp. chopped fresh parsley (you can also do half fresh basil if you have that on hand)
  • ¾ tsp. Himalayan salt
Instructions
  1. Combine your apple cider vinegar, balsamic vinegar, lemon juice, and oil in a small bowl and mix. Set aside.
  2. Combine cucumber, tomatoes, onion, parsley, salt in a large bowl and mix well.
  3. Drizzle your dressing over the cucumber mixture and toss gently to blend.
  4. Eat right away or let refrigerate for an hour to let flavors marinate.
  5. Enjoy!
