Egg Cups

I used the egg and vegetable frittata recipe in my Hammer and Chisel nutrition guide to make these egg cups. (1 red and 1/2 green per two cups) They lasted me all week and were good cold! A BIG TIP is to make sure you spray the pan good because they stick really bad! If you have any suggestions on how to make them not stick please share in the comments.

Easy to make but hard to clean up. Make sure to spray your pan good so they don't stick.

Ingredients
  • ½ tsp
  • 1 tsp olive oil or coconut oil
  • 1 medium leek, sliced thin
  • 2 medium zucchini, chopped
  • 1 medium red bell pepper, chopped
  • 6 oz of baby spinach, chopped
  • 12 large eggs
  • ¼ cup unsweetened coconut milk
Instructions
  1. I personally cooked the veggies on a hot skillet to make them soft and wilt the spinach before baking them. Then mixed the eggs mixture and veggies together before dividing them into muffin tins.
