Grilled Teriyaki Chicken

This is my husbands FAVORITE meal!! When he has been away for work, this is his going away meal and his welcoming home meal. He likes to have my homemade macaroni and cheese along with it.

It is important to prepare ahead of time with this dish, because you want the chicken to have time to marinate. I have done it the morning of and that seems to work great, but the longer the better so the night before would be best.  I use a gallon ziplock bag to mix the marinade together and then plop the chicken in and stick it in the fridge.

All you need is a heated up grill and you got yourself some amazing teriyaki chicken for dinner! I have also used our electric grill if my husband was not home to grill outside. Even baking them at 350 degrees for 30 minutes tastes amazing too. Serve it with my homemade macaroni and cheese and some green beans and you have a delicious meal! We have even used pineapple slices to grill or have on top of the chicken.

It is important to have a balanced meal, and it is hard to know exactly how much of what food group you should have on your plate. So I use my Portion Fix containers to help guide me throughout the day for each meal. Makes a perfect plate and keeps me eating to fuel my body. No over eating and no counting calories.

You can prep ahead of time with marinating the chicken the morning of. Then you just heat up the grill, oven, or electric griddle and cook them. Top with sliced pineapple slices to add extra flavor! Serve with my Baked Macaroni and Cheese and peas to make my husbands favorite meal. 🙂

Ingredients
  • ⅓ cup Light Brown Sugar, packed (I leave this out and they still taste delicious)
  • 1 Garlic Cloves, minced
  • ½ tsp Ginger
  • ½ cup Braggs Amino Acid (or regular soy sauce)
  • ⅓ cup Pinapple Juice (I use it from sliced pineapple can in 100% pineapple juice)
  • ¼ cup Apple Cider Vinegar
  • 2 Tbsp Safflower Oil
  • 4 Free Range Chicken Breasts, skinned and boned (we have also used chicken thighs)
Instructions
  1. Combine first seven ingredients for marinade in a large zip-lock bag for easy throw away. Marinate chicken overnight or full morning prior to dinner.
  2. Preheat gas grill. Cook chicken with cover down on medium setting 20 minutes, turning once.
  3. OR
  4. Heat oven to 350F and cook for 30 minutes.
  5. Use the pineapple slices to grill or serve fresh along top of your chicken. Such a great added touch!
