Honey Pork Tenderloin (Crockpot)

This dinner was super easy to throw together! First, you slice up all your apples. Then, you lay out your pork tenderloin and cut deep cuts in it. Stick your apples slices into those cuts. The leftover apple slices go on the bottom of the crockpot first, then you drizzle your honey and sprinkle the cinnamon over them. Finally, place your beautiful pork tenderloin on top and close the lid! Let it cook on LOW for 6-8 hours.

 

This is what you get after 8 hours on LOW. The house smells AMAZING!!! I just used two forks and shredded it and it just fell apart!

 

Here is what it looked like after I shredded it. Make sure to grab some of that sweet juice to go on your plate!

Super quick to plop into the crockpot in the morning. It just fell apart to shred when it was time to eat. The house smelt so sweet and the flavor the honey and apples added to the shredded pork was amazing! Thumbs up from the whole BAIR family!

Serves: Makes a lot!
Ingredients
  • 3.5 lbs pork tenderloin (or substitute with chicken)
  • 5 medium sliced apples
  • 1 cup honey
  • 3 tbsp cinnamon
Instructions
  1. Make sure pork is thawed. (I got mine from Trader Joe's)
  2. Cut deep slits in the pork or chicken and insert one apple slice into each slit. Leave it on the cutting board.
  3. Place the rest of the apple slices you didn't use at the bottom of the slow cooker.
  4. Place the remaining ingredients into the slow cooker (honey and cinnamon), with the apples on the bottom and layer the pork tenderloins or chicken over the top.
  5. Cover and cook on low for 6-8 hours.
  6. Shred and serve along with apples and leftover honey "sauce" in the bottom of the crockpot.
  7. We had a side salad, steamed seasonal veggies for a complete meal. We also cooked some rice to have along with the pork. This was a thumbs up meal from my husband and three kids (ages 10, 8, and 4).
