Kale Marinated Greens

I found this recipe in an issue of World Health News. With the many ingredients it is a very healing dish for your body. Everything is raw but when marinated takes on such a great flavor! This batch lasted me about 3 days with a side salad for my lunch. 

You will need kale greens, red pepper, lemon juice, oil, zucchini, chopped garlic and Braggs Aminos (a type of soy sauce). You start by chopping up the greens into bite size pieces. I probably could have chopped mine smaller. Put the rest of the ingredients into a bowl and toss well until the liquid coats all the greens.

Now it is time to let it marinate. Anywhere from 2 hours to 24 hours. Of course the longer you marinate, the better the flavor. It lasts good up to 3 days. Don’t worry, you will eat it all by then. So delicious!

This is a delicious side to any dish. I enjoy it for a side salad for my lunch. I found it from an issue of World Health News. I encourage you to purchase organic ingredients to get the best quality food for your body.

Ingredients
  • 5 cups Kale Greens (Can use collard or mustard greens also.)
  • ⅓ cup red pepper diced
  • 1 cup lemon juice
  • 1 cup oil (I used olive, but you can use sesame or flax also.)
  • ⅓ cup zucchini diced
  • 1 Tablespoon chopped garlic (I used a garlic press)
  • 1 cup Braggs Aminos (or Nama Shoyu Tamari)
Instructions
  1. Chop the greens of your choice and the other vegetables up into bite size pieces so they will digest better.
  2. Put all the ingredients into a bowl and toss until well coated by the liquid.
  3. Put into the refrigerator for 2 - 24 hours to let marinate. The longer the better flavor you will get.
  4. This keeps for about 3 days.
  5. Enjoy!
