I am still a beginner with meal prep on Sundays, but I am finding some meals that really work for me and make my life easier. I have been making this lunch in large mason jars for the past few weeks. I have not gotten tired of it yet! The flavor is so light and refreshing, while also filling you up. I found this recipe from the Fixate Cooking Show on Beachbody On Demand. This is where I get access to all my at home workouts and the kids and I enjoy following the healthy recipes on the cooking show. We all know that eating clean isn’t enough, it is eating clean with proper portion that brings the results. All you need is a big batch of cooked quinoa, chopped up onions, tomatoes and cucumbers, lemon juice, olive oil, Himalayan salt, with some fresh mint and parsley for extra flavor. I personally only use parsley but I am sure the mint tastes wonderful as well. I put this recipe in each of my large mason jars for 5 lunches for the week! Great for a grab and go lunch on a busy day.
Portion Fix Container breakdown: (Great for 80 Day Obsession Timed Nutrition!)
1 green, 1 yellow, 1 red, 1 tsp.
- ½ cup cooked quinoa
- 1⁄3 cup chopped onion
- 1⁄3 cup chopped tomato
- 1⁄3 cup chopped cucumber
- ¾ cup cooked chopped chicken breast, boneless, skinless *I bought some pre cooked chicken strips and diced them up to add to each one. You can also cook a whole chicken and shred it for this dish as well.
- 1 dash sea salt (or Himalayan salt)
- 1 tsp. extra-virgin olive oil
- 1 Tbsp. lemon juice
- 1 Tbsp. chopped fresh mint *I ommitted the mint because I forgot it when I went grocery shopping. I liked it with just the parsley.
- 1 Tbsp. chopped fresh parsley
- Combine the cooked quinoa, onion, tomato, cucumber, chicken, salt, oil, lemon juice, mint, and parsley in your bowl or mason jar and toss gently to mix it up. If using this for meal prep, keep them in the refrigerator for up to 5 days for a quick grab and go lunch.
