Who loves quinoa?! Me!!! Quinoa is a complete protein, meaning it contains all nine essential amino acids. It is also a great wheat-free alternative to grains. Not sure how to say it? It is pronounced ‘keen-wa’ and has twice the protein content of rice or barley! I love this food and use it often in my meals. To me it does not have a strong flavor of its own, but takes on the flavors of what you cook with it. Here are some of my favorite ways to use quinoa.
I bet you would have never thought of adding quinoa to your yogurt parfait! It is actually really good and great for you! Check out my yogurt parfait for a pre made breakfast or afternoon snack.
Another pre made breakfast or snack that is easy to pop into your mouth are these awesome spinach, bacon and quinoa power bites! Make a big batch on Sunday and divide them up into 3 per serving. Grab them as you leave in the morning for a quick filling breakfast. I use them for a pre workout meal to give me that fuel I need to push hard during my workout.
Now lets talk lunch. I am huge on meal prep on Sundays, to help me stay on track with my nutrition during the week. These awesome salads in a jar are so simple to make and stay fresh during the week. I of course use quinoa for my yellow container of goodness. Check it out!
Here is another salad I use quinoa in. It is pretty much the star of this dish making the name Quinoa Salad! This can be for yourself during the week for a lunch or I personally love to bring this dish to a gathering, it has always been a huge hit. It is light and fresh and simple to put together.
Let’s talk dinner. These Quinoa Stuffed Peppers are so yummy! I love the stuffing and can eat it plain. So much flavor and lots of veggies packed into this stuffing as well.
I use quinoa often as a side dish with our dinners, instead of using rice. A few meals I often pair with quinoa are my Sour Cream Chicken and Veggies, Ginger Shrimp Stir-Fry, and my Honey Salmon in Foil. You can use it plain, but I also like to add some flavor to my quinoa by adding in some sautéed onion and pressed garlic, along with salt and pepper. Quinoa is great for taking on the flavors of what it is cooked with.
I of course saved dessert for last! This is an awesome cookie and seriously melts in your mouth. You don’t have to feel too guilty after eating a few either. Check out my Quinoa Chocolate Chip Cookies and let me know what you think.
